Each month Yucatan Today visits a restaurant in order to describe what it has to offer. This is not a review; it is a summary of the menu, service, ambience, prices, and opening hours.

 

Its name “La Tradición” identifies it perfectly: “Over three generations we have distinguished ourselves by rescuing the gastronomic tradition of our state, respecting the ingredients and original preparation processes,” comments the restaurant owner. “Our cuisine is a unique art, which can only be perceived through our traditions, and of course, in beautiful Yucatán. Every day we look for ways to rescue what is ours, to keep the culture of Yucatán and southeastern Mexico alive. The authenticity of the unique flavors is the best face outside our borders, and in the Restaurante La Tradición the truth is in the taste.”

 

In their Centro location, half a block up from the Santa Lucía church, you can enjoy your dinner accompanied by another Yucatecan tradition: live trova music, from Monday-Saturday 8 pm – 10 pm.

 

NOTE FROM SEPTEMBER 2013: This restaurant has just been named with the distinction TESORO DE MEXICO (Treasure of Mexico). This distinction was only granted to 8 hacienda/hotels and La Tradición as the only restaurant to receive this recognition. TESORO DE MÉXICO is an honor granted by the state and federal tourism boards. Each state in Mexico has its TESOROS, and now there are 9 (8 hotels and 1 restaurnat) which proudly display this honor in Yucatán. The restaurant is proud to be a part of this select group, for they work hard at rescuing the culinary values of this region.

 

Below we present a short description of some of the most outstanding dishes:

 

Soups:

Crema de Xcatic: cream soup with a base of chile Xcatic, Edam cheese, and white wine. Slightly spicy.

Sopa de Lima: turkey broth with fine slices of fried tortilla and the original taste of lime.

Crema de Chaya: cream soup with a base of fresh chaya, Edam cheese, and white wine.

 

Appetizers:

Papadzules: Succulent pieces of hard-boiled egg wrapped in hand-made tortillas, bathed in a generous portion of cream of squash seed and tomato sauce.

Longaniza de Valladolid: delicious sausage from the east part of Yucatán, charcoal grilled and accompanied by grilled onion, chiltomate, and sour orange.

Panuchos: delicious fried tortillas stuffed with beans, with a bed of lettuce, shredded turkey, chopped tomato, onion, and cucumber.

Salbutes: hand-shaped corn meal which inflates upon frying, with a bed of lettuce, shredded turkey, chopped tomato, onion, and cucumber.

Empanadas: Edam cheese or dogfish turnovers.

 

Specialties

include the delicious, famous dishes such as Queso Relleno, Poc-Chuc, Lomitos de Valladolid, Relleno Negro, Cochinita Pibil, and Pollo Pibil. These dishes are also offered:

 

Pavo San Simón: Delicious turkey served with potatoes and steamed carrots, adorned with peas, onion, and sliced bread.

Escabeche Oriental: Delicious turkey prepared with the traditional “Escabeche” paste from Valladolid, served with red onion and “but”, a mixture of raisins, capers, olives, and hard-boiled eggs.

Mechado Auténtico: delicious turkey served in its broth, prepared with Greek olives and red wine. Authentic classic recipe.

Pavo en Sackool: Charcoal roasted turkey, served on a bed of “kol” made from corn, flour and almonds. Accompanied by pickled onion.

Pollo Ticuleño: Breaded chicken breast served on a base of beans and fried banana, adorned with small pieces of ham, cheese, and peas.

Brocheta a la Yucateca: delicious chunks of pork marinated in achiote paste and garlic, charcoal grilled with onion, red pepper, and tomato. Two skewers.

 

Desserts include : Dulce de Nance, ice cream, Caballeros Pobres, Crema Española, Dulce de Papaya, Flan Napolitano.
