For Natalia Abdala, a lawyer by profession, baking became a grounding wire, something profoundly human that brought her calm amidst so much uncertainty. What began as small home deliveries soon transformed into a way of supporting others from a distance.
Amidst dough, fermentation, and fired-up ovens, Natalia found not only a craft but a bridge back to the essentials—to what truly nourishes. Thus, NUUP took shape: a project stemming from the love of flavors, experiences, and human connections.
The Meaning Behind NUUP

“Nuup,” which in Maya means union or to unite, summarizes what happens in this space: flavors that meet, people who share, and moments that become memorable around a freshly baked bread. For the team, this union is also human. Their motto, “bread for everyone,” reflects a way of working where suppliers, staff, customers, and the community all feel part of the same fabric.
That's why NUUP is not just a bakery; it is a meeting point. More than just selling something delicious, they seek to be part of those moments that bring people together: a family Sunday, breakfast with friends, a celebration, or even a silent embrace on a complicated day. NUUP’s display cases look like a small universe of personalities. Each piece is born from Natalia's sensitivity, inspired by seasons, memories, colors, and cravings that change depending on the time of year. In this process, the sourdough starter is the heart: the ingredient that gives character, depth, and life to every bread, sustaining their unique style.
Among all the options, her favorite is the sourdough concha (sweet bun), a perfect example of what NUUP aims for: tradition reinterpreted with its own identity. But here, there is no single “must-try” item. A different logic operates at NUUP: every visitor eventually finds, without rush, the bite that clicks with them. Whatever you crave in that moment is usually exactly what you need.

Depending on the season, they incorporate Yucatecan ingredients or regional flavors. NUUP is not a conceptual bakery centered entirely around local food, but one that honors what this land offers and those who work it. A New Home in Mérida’s Centro

Mérida's growth has always excited Natalia. Opening a branch in centro was a dream: she wanted to be right where travelers arrive, where the first contact with the city happens. She wanted NUUP to be a warm welcome for those coming from afar.
The new location, inaugurated on October 15, 2025, is very different from the original one in Temozón Norte (which succeeded the small spot near the Glorieta de la Paz, also known as the "paso deprimido" or underpass). Everything here is designed so that the visitor feels welcomed from the first step: a smile at the entrance, a cozy atmosphere, and that unique NUUP magic that adapts to the rhythm of the center without losing its essence.
Furthermore, they have on-site parking, a valuable plus in the area, and the place is pet-friendly, perfect for those traveling with their furry companion.
What Will You Find at the Downtown Location?

In this new space, a counter full of cravings awaits you: laminated pastries with a French touch, sourdough conchas, and cinnamon rolls fresh out of the oven, plus the seasonal breads that always surprise. To accompany your pastry, you can order anything from a hot or cold coffee to non-coffee beverages if you're looking for something lighter. Very soon, they will also have sandwiches, perfect if you want something more substantial before continuing your route through the Center.
The average receipt is around $130 pesos, making it a tasty and accessible stop at any time of the day.

Although the bread is the visible face, what sustains NUUP is its people. Behind the counter is a committed team genuinely proud of what they do. Natalia tells the story with a calmness that says it all: here, work flows because everyone rows in the same direction.
