Pollo en Escabeche cocina yucateca

– 1 chicken in pieces
– 4 tabasco peppers
– ½ tbs. black pepper
– 5 cloves
– 1 chunk of cinnamon
– ½ tbs. cumin
– ½ tbs. oregano
– 5 garlic cloves
– ¼ cup vinegar

Escabeche: Fry in lard

– 3 onions
– 5 cloves garlic
– 2 bay leaves
– Roasted Chile xcatic

Grind the ingredients and add the paste to the chicken, fry and then finish cooking in the chicken broth, place in the escabeche and add some broth.
