This iconic space was born thanks to the vision of Carol Kolozs, who, captivated by an abandoned old mansion, decided to transform it into an unparalleled destination.

 

What began as a retirement project evolved into an ambitious dream as Carol Kolozs acquired not just the mansion but also the adjacent property, transforming them into an elegant retreat. The restoration, led by architects Josefina Larrain and Salvador Reyes Ríos, took three years and managed to blend the original essence with contemporary touches. The result was an architectural gem that opened its doors on November 1, 2009. Now, as it celebrates its 15th anniversary, Rosas & Xocolate has solidified as a pioneer in the world of boutique and luxury hotels.

The legacy of Carol Kolozs, who sadly passed away this year, lives on in every corner of the hotel. Rosas & Xocolate and the rest of Grupo Rosas represent everything he loved and valued throughout his life. His vision transformed a forgotten mansion into a symbol of elegance and comfort, and it was just the beginning of a larger project. Grupo Rosas has grown to include several culinary concepts that complement the hotel experience, such as Maya de Asia and Lagos Taverna Griega. Together, these projects offer a comprehensive and unique experience in Mérida. Rosas & Xocolate, in particular, is the only boutique hotel on this iconic avenue that offers a complete experience with amenities such as a spa, boutique, gym, pool, and an award-winning restaurant.

Every detail at Rosas & Xocolate tells a story: from the outdoor bathtubs and restored floors to the private terraces of the Xocolate, Rosas, and Rosas & Xocolate suites. With a total of 17 rooms ranging from $285 to $695 USD per night, the hotel has managed to preserve many of the original structures of the mansion, while the new areas respect the architectural character of the past. This blend of traditional and contemporary creates the ideal atmosphere for marriage proposals, corporate events, or photo sessions. Additionally, the iconic pool, a highly photogenic gathering spot, adds a special touch to the unique experience the hotel offers.

In this space, art also plays a fundamental role. With works by Ralf Walter and Marcela Díaz displayed throughout the hotel, Rosas & Xocolate further enriches the aesthetic experience of its visitors. Intending to promote local art, the hotel plans to expand its cultural offerings through monthly exhibitions in collaboration with art houses and local galleries, becoming a reference not only in hospitality but also in promoting artistic talent.
