
Salt is the oldest additive used in food. Mankind’s history and development are inextricably linked to its exploitation and consumption. It is one of the most desirable foods, second only to the basics, for neither humans nor animals can live without it.

In Greece, because of salt’s ability to preserve food, it played a significant role in the development of civilization. The demand for salt defined the first commercial routes, across unknown oceans, and in the most remote desert the city of Jericho was founded 10,000 years ago, as a commercial center for salt. It was so valuable it even served as money.
Because of salt’s importance to human life, it has always been a prized commodity. Countries fought over rights to salt mines, they fought so they could take over the other country and get its salt taxes, and they attacked the enemy’s salt supply during wars so the enemy would weaken without the ability to preserve their food.
Rescue of ancestral legacy and wisdom
Long ago, liquid salt was considered “liquid gold” of great purity thanks to its origin and natural evaporation. The Greeks used this brine to season and add flavor to their vegetables; they called it “salata” (which of course is the origin of the word “salad”). The Maya also used this liquid to preserve and season their foods.
Sal Líquida Xcambó (liquid salt) is manually harvested on the Yucatán coast. It is the result of three factors: the sun, the wind, and the ancestral techniques of Maya salt-makers. It consists of a handcrafted process of eight months with the following stages: solar evaporation, crystalization, collection, saturation, dissolution, flocculation, neutralization, alcalinization, purification, and bottling.
The master salt-makers concentrate it in its natural form until it reaches its optimum salinity. Thanks to potent mineralization, filtration, and oxygenation, it is rich in minerals and trace elements. Its saltiness is more uniform than other types of salt.
