Caballero Pobre cocina yucateca

“Caballeros Pobres” are a typical Yucatecan dessert, made with Yucatecan baguette submerged on milk and fried, very easy to make and very cheap too. Usually it’s served cold..

Ingredients:

1 stale loaf French bread
125 ml milk
125 ml condensed milk
1 tsp. vanilla
5 stiffly beaten egg whites
Oil

1 lt. water
3 cloves
1/2 cup raisins
1 cinnamon stick
1 ½ cups sugar

Slice the bread diagonally.
Mix the 2 milks and the vanilla. Dip the bread one slice at a time into this mixture, then cover with the egg whites.
Fry in oil, drain, set aside, and let cool.

Syrup:

Boil the water and the other 4 ingredients at low heat without stirring until thick (approx. 30 min.) and let cool.
Arrange the “caballeros pobres” in a serving dish, cover with the cooled syrup. Refrigerate 1 hour and serve.
